Onions are used in virtually every Guatemalan dish as a base ingredient. White onions are the most common variety, used raw in salads, grilled alongside meats, and as a flavor base for soups and stews. The main production areas are Quetzaltenango and Huehuetenango in the western highlands. Prices tend to be relatively stable throughout the year.
