Tilapia is the most widely available fresh fish in Guatemala, farmed primarily in Izabal and the Pacific coast. Lake Atitlan and Lake Peten Itza also have fishing traditions. In coastal areas, seafood is more varied and affordable. Inland, tilapia dominates due to successful aquaculture programs. Fish is commonly prepared fried whole, in ceviche, or in the coastal dish tapado (coconut seafood soup).
